Prepare the Steak

Remove the ribeye steak from the refrigerator and allow it to come to room temperature for about 30-60 minutes. This ensures even cooking.

Season the Steak

Generously season both sides of the ribeye with kosher salt and freshly ground black pepper. Press the seasoning into the meat to adhere.

Preheat the Grill or Pan

Preheat your grill to high heat or heat a cast-iron skillet over medium-high heat. Add olive oil to the pan if using a skillet.

Sear the Steak

Place the steak on the grill or in the skillet. Sear for about 4-5 minutes on one side without moving it, until a nice crust forms.

Flip and Cook

Flip the steak and add rosemary or thyme. Continue cooking for another 4-5 minutes for medium-rare or to your desired doneness.

Rest the Steak

Remove the steak from the heat and let it rest for at least 10 minutes. This allows the juices to redistribute.

Slice the ribeye against the grain and serve immediately, optionally garnished with the cooked herbs.
