Melt the Chocolate

Chop the dark chocolate into small pieces and place it in a heatproof bowl. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 2-3 minutes.

Combine and Cool

Stir the chocolate and cream mixture until smooth and fully combined. Add vanilla extract and a pinch of sea salt, mixing well. Cover the bowl with plastic wrap and refrigerate for about 2 hours, until the mixture is firm enough to scoop.

Form the Truffles

Once the mixture is firm, use a melon baller or a teaspoon to scoop out portions of the chocolate mixture and roll them into balls using your hands.

Coat the Truffles

Roll each truffle in cocoa powder or your choice of optional toppings to coat evenly.

Chill and Serve

Place the coated truffles on a baking sheet lined with parchment paper. Refrigerate for another 30 minutes to set before serving.
