In a large brew kettle, heat 3.5 gallons of filtered water to 165°F (74°C). Add the pale malt, caramel/crystal malt, and Munich malt to the water. Stir well to ensure the grains are fully saturated.

Prepare the Mash

Allow the mash to rest for 60 minutes at a temperature of 152°F (67°C). Stir occasionally to maintain an even temperature throughout the mash.

Mash Rest

After the mash rest, heat an additional 1.5 gallons of water to 170°F (77°C). Sparge the mash with this water to extract the sugars, collecting the wort in a separate kettle.

Bring the collected wort to a boil. Once boiling, add the Citra hops and boil for 60 minutes.

Boil the Wort

With 15 minutes left in the boil, add the Mosaic hops and Simcoe hops to the wort for flavor.

Once the boiling is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches around 68°F (20°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Ale yeast into the wort and seal the vessel with an airlock. Allow it to ferment at room temperature for about 1-2 weeks.

Fermentation

After fermentation is complete, prepare a bottling bucket and sanitize all bottles and caps.

Prepare for Bottling

Siphon the beer into the bottles, leaving about an inch of headspace. Cap the bottles and allow them to carbonate at room temperature for another 1-2 weeks.
