Prepare tempering and mash
Heat 2 tablespoons oil in a skillet over medium heat. Add mustard seeds and let them pop (about 30 seconds). Add cumin seeds and cook 10–15 seconds until fragrant. Add the cooked potatoes and turmeric, red chili powder, chaat masala, salt and black pepper. Sauté for 3–4 minutes, gently mashing some potato pieces with the back of a spoon to create a slightly chunky texture. Remove from heat and stir in 1 tablespoon lemon juice. Taste and adjust salt or chaat masala if needed. Keep warm.
Dahi (Yogurt) Sauce

Whisk the 1.5 cups plain yogurt in a bowl until smooth and slightly loose (add 1–2 tablespoons water if very thick). Stir in 1/2 teaspoon sugar, 1/4 teaspoon salt and 1/2 teaspoon roasted cumin powder. Taste and adjust sweetness or salt so the dahi is mildly sweet-tangy and well-seasoned. Chill until assembly.

If using tamarind concentrate, taste and, if too tart, dissolve 1 teaspoon brown sugar or jaggery into it to achieve a balanced sweet-tart chutney. Keep green cilantro-mint chutney ready if you like herbaceous heat. Transfer both chutneys to squeeze bottles or small bowls for easy assembly.

Prepare puris
Arrange 24 puri shells on a tray. Lightly crack a small hole on top of each puri if not already open so you can fill them without breaking the shell.

Fill puris
Using a teaspoon, place about 1 to 1.5 tablespoons of the warm potato mixture into each puri (roughly 1 tablespoon per puri). Be gentle so shells don’t crack.

Top the stuffed puris with about 1 tablespoon of the seasoned yogurt over each (a little more or less to taste), then drizzle about 1 teaspoon tamarind chutney and 1/2 teaspoon green chutney (if using) on each.

Sprinkle finely chopped red onion (about 1/2 teaspoon per puri), a pinch of roasted cumin powder if desired, and a pinch of chaat masala over the dahi. Add a small spoonful of boondi or crushed papri for crunch.

Generously top each puri with sev (about 1 to 1.5 teaspoons per puri) and finish with chopped cilantro and a few pomegranate arils on selected puris for color and brightness. Add finely chopped green chile to individual puris if you want extra heat.
