Prepare Okra
Wash the okra and pat dry thoroughly. Trim stems only (leave pods whole). Using a sharp knife or mandoline, slice the okra lengthwise into very thin matchstick pieces about 1/8" (3 mm) wide and 2–3 inches long. Pat the cut okra dry again on paper towels to remove surface moisture — this helps the coating adhere and reduces splatter.

Make Dry Coating
In a wide shallow bowl or rimmed baking sheet, whisk together the all-purpose flour, cornstarch, cornmeal, panko, baking powder, kosher salt, black pepper, smoked paprika, and cayenne until evenly combined. Break up any panko clumps so coating is uniform.

Mix Wet Batter
In a medium bowl, whisk the buttermilk with the egg until smooth. Stir in the Worcestershire sauce and optional hot sauce. The batter should be slightly thick but pourable; adjust with 1–2 tablespoons water or extra buttermilk if needed.

Coat the Okra
Working in small batches (about 1/4 lb okra per batch), tumble the matchstick okra in the wet batter to coat completely, then transfer directly into the dry coating. Toss gently to coat, pressing lightly so pieces pick up the dry mix. Shake off excess and spread the coated okra in a single layer on a parchment-lined tray while you finish the remaining batches. Keep coated okra chilled briefly (10–15 minutes) if you finish coating early; this helps the coating set.

Heat Oil
Pour neutral oil into a large heavy-bottomed pot or Dutch oven to a depth of 2–3 inches (around 1 L). Heat over medium-high to reach 350°F (175°C). If you don’t have a thermometer, test by dropping one small piece of coated okra — it should sizzle immediately and rise to the surface steadily.

Fry in Batches
Fry the coated matchstick okra in small batches so pieces don’t stick together and oil temperature stays steady. Use a spider or slotted spoon to gently lower a small handful into the oil. Fry for 2–3 minutes, stirring gently, until golden brown and crisp. Remove with a slotted spoon or spider and transfer to a paper towel–lined baking sheet. Sprinkle lightly with finishing salt while still hot. Repeat with remaining coated okra, letting the oil come back to temperature between batches.
