Carrot Halwa (Gajar Halwa) Filling

    Prepare carrots

    Peel and grate carrots on a medium-coarse grater until you have about 4 cups packed grated carrot. Set aside.

    Cook carrots

    Heat 3 tablespoons unsalted butter in a wide, heavy skillet over medium heat. Add the grated carrots and sauté 6–8 minutes, stirring frequently, until the raw smell starts to fade and carrots soften slightly.

    Simmer with milk

    Add 1 cup whole milk to the pan, stir, bring to a gentle simmer, then reduce heat to medium-low. Cook, stirring occasionally, until most of the milk is absorbed and carrots are tender, about 10–12 minutes.

    Sweeten and finish

    Stir in 1 cup sweetened condensed milk and 2 tablespoons granulated sugar. Continue cooking over low heat, stirring frequently, until the mixture thickens and pulls away from the pan — about 8–10 minutes. Stir in 1 teaspoon cardamom powder, optional saffron (soaked in 1 tbs warm milk if using), and the chopped pistachios and almonds. Remove from heat and cool completely to room temperature before assembling (to avoid melting the frosting).

Brown Butter Cake (two 8-inch layers)

    Brown the butter

    Preheat oven to 350°F (175°C). In a light-colored saucepan, melt 10 tablespoons unsalted butter over medium heat. Continue cooking, swirling occasionally, until butter foams and brown solids form and smell nutty, 5–8 minutes. Remove from heat and transfer to a heatproof bowl. Let cool until warm (not hot). Reserve 2 tablespoons of browned butter for brushing the pans if desired.

    Prepare pans

    Grease and line two 8-inch round cake pans with parchment; brush with reserved brown butter or oil and dust with a little flour. Tap out excess.

    Dry ingredients

    Whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon kosher salt, and 1 teaspoon ground cinnamon in a medium bowl. Set aside.

    Wet ingredients

    In a large bowl, whisk 1 1/4 cups granulated sugar with the cooled (but still warm) browned butter and 2 tablespoons neutral oil until smooth. Add eggs one at a time, whisking well after each addition. Stir in 1 teaspoon vanilla extract.

    Combine with buttermilk

    Alternate adding the dry ingredients and 1 cup buttermilk to the wet mixture in three additions, beginning and ending with the dry ingredients. Mix each addition until just combined; do not overmix.

    Bake

    Divide batter evenly between the two prepared pans (use a scale for accuracy if possible). Smooth tops and bake in the center of the preheated oven for 22–26 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs and the cakes spring back lightly. Rotate pans halfway through if your oven has hot spots.

    Cool layers

    Cool cakes in pans for 10 minutes, then run a knife around edges, invert onto cooling racks, remove parchment, and cool completely. If layers dome, level with a serrated knife or cake leveler.

Chai-Spice Cream Cheese Icing

    Beat cream cheese and butter

    In a large mixing bowl, beat 8 oz softened cream cheese and 4 tablespoons softened unsalted butter with an electric mixer on medium speed until smooth and lump-free, about 1–2 minutes.

    Add sugar and spices

    With the mixer on low, gradually add 2 cups sifted confectioners' sugar until incorporated and smooth. Increase speed to medium and beat until light and fluffy, 1–2 minutes. Add 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, 1/4 teaspoon cardamom, 1/4 teaspoon ginger, 1/8 teaspoon cloves, 1/8 teaspoon salt, and optional orange zest. Beat briefly to combine. If the frosting is too thick, add 1 teaspoon milk at a time to reach spreading consistency. Chill 10 minutes if it becomes too soft from mixing.

Assembly & Garnish

    Level and layer

    Place one cooled cake layer on your cake stand or board. If the carrot halwa is very loose, spoon it into a fine-mesh sieve over a bowl and press gently to remove excess liquid; you want a moist but not runny filling. Spread an even layer (about half) of the cooled carrot halwa over the bottom cake, leaving a 1/4-inch border to prevent overflow.

    Top with second layer

    Gently place the second cake layer on top, pressing lightly to adhere.

    Crumb coat

    Spread about 1 cup of the chai-spice cream cheese icing over the top and sides to seal crumbs. Chill the cake 15–20 minutes to set the crumb coat.

    Final frost and decorate

    Apply the remaining frosting smoothly over the cake. If desired, pipe decorative swirls on top. Sprinkle chopped roasted pistachios and toasted desiccated coconut around the top edge and a few in the center. Garnish with carrot ribbons or microgreens for contrast.

    Chill and serve

    Chill the assembled cake for at least 30 minutes to set the frosting and allow flavors to meld. Bring to room temperature 20–30 minutes before slicing. Serve slices with additional toasted nuts if desired.
