Peach syrup
Assembly
Method
Peach syrup
- 1
Make peach purée
Place the chopped ripe peaches in a blender or food processor and blend until smooth. If you prefer a slightly textured syrup, pulse briefly to leave small peach bits.
- 2
Cook syrup
In a small saucepan combine the peach purée, granulated sugar, and 1 cup water. Stir to combine. Place over medium heat and bring to a gentle simmer, stirring occasionally. Allow to simmer gently for 6–8 minutes to dissolve the sugar and concentrate flavor.
- 3
Finish syrup
Remove from heat and stir in 1 tablespoon fresh lemon juice. Let the syrup cool to room temperature (about 20–30 minutes). For a clearer syrup, strain through a fine-mesh sieve into a clean bowl, pressing solids gently; discard solids or reserve for another use. Refrigerate the syrup until fully chilled (at least 30 minutes).
Assembly
- 4
Prepare glasses
Fill four tall glasses with ice, dividing approximately 2 cups of ice among them (about 1/2 cup per glass).
- 5
Measure syrup
For a single serving (recipe yields 4 servings): add 3 tablespoons of chilled peach syrup to each glass. If you prefer a milder drink, use 2 tablespoons; for stronger, use 4 tablespoons.
- 6
Add water
Divide 3 cups of cold sparkling water among the four glasses (about 3/4 cup or 180 ml per glass). If you want a less fizzy or slightly milder refresher, split 1/2 cup still water and 1/4 cup sparkling water per glass instead (the recipe includes 0.5 cup still water option). Stir gently to combine the syrup and water without flattening the bubbles.
- 7
Garnish and serve
Garnish each glass with a fresh peach slice, 2 mint leaves, and a lemon slice if using. Serve immediately with a straw or long spoon. Taste and adjust: add an extra tablespoon of syrup for more sweetness or a splash of lemon juice for extra brightness.
