Method
Tea Base

- 2
Steep tea
Add 3 green tea bags to the hot water and steep 3 minutes for a bright, not-bitter flavor. Avoid oversteeping; steep up to 4 minutes maximum if you prefer stronger tea.
- 3
Sweeten and finish
Remove the tea bags, squeezing gently to extract liquid (avoid squeezing tannins). While the tea is still warm, stir in 2 tablespoons granulated sugar, 1 tablespoon honey, and 1 tablespoon fresh lemon juice until dissolved. Taste and adjust sweetness or lemon as desired. Let the tea cool to room temperature (about 20–30 minutes) or place in the refrigerator to speed cooling.
Peach Component
- 4
Prepare peaches
Peel (blanch and slip or use a paring knife) and pit the peaches, then chop into roughly 1/2-inch pieces to yield about 2 cups.
- 5
Poach peaches
In a small saucepan, combine 1 cup water and 2 tablespoons granulated sugar and bring to a simmer. Add the chopped peaches and simmer gently for 5–7 minutes until tender and slightly translucent. Stir occasionally to prevent sticking.
- 6
Cool and mash
Remove the pan from heat and let the peaches cool in their poaching liquid for 10 minutes. For a clear, lightly pulpy syrup, strain the peaches, reserving both syrup and fruit. Option A: For a smooth peach puree, transfer peaches and 1/4 cup of the poaching liquid to a blender and puree until smooth. Option B: For chunkier texture, lightly mash the peaches with a fork and stir back some syrup to loosen. Chill the peach component until cold.

Combine tea and peaches
In a pitcher, combine the cooled green tea and the prepared peach puree or mashed peaches along with 2–3 tablespoons of the reserved poaching liquid (adjust for sweetness and intensity). Stir well. If desired, strain the combined mixture through a fine-mesh sieve for a clear iced tea, or leave unstrained for texture.
- 8
Assemble drinks
Fill 2 tall glasses with ice (about 1 cup ice per glass). Pour the peach green tea over the ice, dividing evenly. Add 2 fresh peach slices to each glass and garnish with 2 mint leaves if using.
- 9
Adjust and serve
Taste one serving and adjust sweetness with a little extra honey or sugar dissolved in a teaspoon of warm water if needed. Serve immediately. Leftover peach green tea keeps covered in the refrigerator for up to 3 days; stir before serving as separation may occur.
