Method

Brewing

  1. 1

    Heat water

Measure 2 cups (about 480 ml) of fresh cold water. Heat the water until it reaches 175–185°F (80–85°C). If you don't have a thermometer, bring to a gentle simmer and remove from heat just before it starts to boil.

  2. 2

    Pre-warm teapot or cup

Pour a small amount of the hot water into your teapot or cup, swirl briefly, then discard. This helps maintain steeping temperature.

  3. 3

    Add tea

Place 2 teaspoons of loose jasmine green tea (or 2 tea bags) into the teapot or into an infuser placed in a cup.

  4. 4

    Steep

Pour the heated water over the tea leaves. Steep for 2 to 3 minutes for a light, floral cup; steep up to 3½ minutes for a slightly stronger flavor. Avoid steeping longer than 4 minutes to prevent bitterness.

  5. 5

    Remove leaves

Remove the infuser or strain out the leaves/tea bags promptly at the end of the steeping time to stop extraction.

Finishing

  1. 6

    Sweeten (optional)

If desired, stir in honey (about 1 teaspoon) while the tea is still warm so it dissolves easily. Adjust to taste.

  2. 7

    Serve hot

Pour the brewed jasmine green tea into cups and serve immediately. Add a slice of lemon if you like a citrus note (note: lemon will increase perceived astringency).

  3. 8

    Serve iced (alternative)

To make iced jasmine tea, allow the brewed tea to cool slightly (5–10 minutes), then pour over a glass filled with about 1 cup of ice. Optionally add honey before cooling so it dissolves, or use simple syrup. Garnish with lemon if desired.
