Method

Tea base

  1. 1

Bring 2 cups fresh water to just-below-boiling (around 175–185°F / 80–85°C). If you don't have a thermometer, bring to a simmer and let rest 1 minute.

  2. 2

Add 2 tsp loose green tea (or 2 tea bags) to a teapot or heatproof container. Pour the hot water over the leaves.

  3. 3

Steep for 2–3 minutes for a bright, grassy flavor. Do not oversteep (over 3–4 minutes) to avoid bitterness.

  4. 4

Strain leaves or remove tea bags and set the brewed green tea aside to cool slightly (5 minutes). If making iced, you can place the tea in the fridge or an ice bath to cool faster.

Milk & honey mixture

  1. 5

While the tea is steeping or cooling, combine the honey and 2 tablespoons hot water in a small bowl or measuring cup. Stir until the honey is fully dissolved to make a honey syrup — this mixes more evenly into the tea and milk.

  2. 6

In a small saucepan, gently warm 1 cup milk over low heat until it's steaming and just below simmering (do not boil). Warming helps the honey integrate and creates a smoother texture. Alternatively, use cold milk if you prefer a cold drink and skip warming.

  3. 7

Stir the honey syrup into the warmed milk until fully incorporated. Add 1/4 tsp vanilla extract and a small pinch (1/8 tsp) of sea salt to round the flavors; stir well.

  4. 8

If you prefer a frothy top, froth the milk briefly with a handheld milk frother or by shaking vigorously in a jar (secure lid) for 20–30 seconds.

Assembly & serving

  1. 9

    Hot Honey Green Milk Tea

Pour about 1 cup of the brewed green tea into a large mug. Slowly pour the warm honey-milk mixture into the tea while stirring gently to combine. Taste and adjust sweetness with additional honey if desired. Garnish with a small lemon zest or slice and serve immediately.

  2. 10

    Iced Honey Green Milk Tea

Fill a tall glass with 1 cup ice cubes. Pour 1 cup cooled green tea over the ice. Stir the honey-milk mixture (cold or chilled) to recombine and pour it over the tea. Gently stir to combine. Garnish with lemon zest if using and serve with a straw.

  3. 11

Notes: If you used cold milk, dissolve honey in 1–2 tbsp warm water first so it blends. Adjust proportions: use 3 parts tea to 2 parts milk for a stronger tea presence or equal parts for a creamier drink.
