Mango Mint Base
Make mango puree
Peel and dice one medium ripe mango (about 1 to 1 1/4 cups diced). Place the diced mango in a blender and process until smooth to yield about 1 cup of mango puree. If needed, add 1-2 teaspoons of water to help blending.
Sweeten and lime
In a small bowl, stir together the granulated sugar and fresh lime juice until the sugar dissolves. This creates a simple lime-sugar mixture that brightens the mango puree.
Combine with mint
Place the fresh mint leaves into a sturdy mixing glass or pitcher. Add the lime-sugar mixture and gently muddle the mint 6-8 times to release aroma and oils — press just enough to bruise leaves but not shred them. Add the mango puree to the muddled mint and stir to combine. Taste and adjust: add up to 1 additional teaspoon sugar or more lime juice if you prefer sweeter or tarter.

Prepare glasses
Divide the crushed ice among 4 highball or Collins glasses (about 3/4 cup crushed ice per glass). If you prefer a single large pitcher, use a large serving pitcher and keep ice separate to avoid diluting before serving.
Portion mango mixture
Spoon or pour about 1/4 cup of the mango-mint mixture into each glass (for 4 servings). If using rum, add 3/4 tablespoon (or about 11 ml) of white rum to each glass now. Stir gently to combine with the ice.
Top with fizz
Top each glass with approximately 3/4 cup of club soda or sparkling water (divide the 3 cups evenly). Stir once gently to integrate the soda with the mango mixture without flattening the bubbles.
