Method

Prep Potatoes & Chickpeas

Boil and dice potatoes

Place whole, peeled potatoes in a pot of salted water. Bring to a boil and simmer 12–15 minutes until tender when pierced with a fork. Drain, let cool slightly, then dice into small 1/2-inch cubes.

Prepare chickpeas

If using canned chickpeas, drain and rinse under cold water. Optionally warm briefly in a microwave or on the stovetop (1–2 minutes) and lightly crush a few with the back of a spoon so some texture adheres to papdi.

In a mixing bowl combine diced potatoes, chickpeas, black salt (1/2 tsp), and 1/2 tsp of regular salt (from the yogurt section if preferred). Toss gently and set aside.

Yogurt

Whisk 2 cups plain yogurt until smooth. Add 2 tablespoons milk if you want a pourable consistency suitable for chaat. Stir in 1 tsp sugar and 1 tsp salt, taste and adjust so yogurt is pleasantly tangy and lightly seasoned.

Keep chilled until assembly so it stays thick but pourable.

Chutneys & Seasonings

If your tamarind and green chutneys are thick, thin each slightly with a tablespoon of water so they drizzle easily. Taste and balance sweet-tangy (tamarind) and bright-spicy (green) flavors. Keep ready in squeeze bottles or small bowls.

Measure out toasted cumin powder, chaat masala, red chili powder and keep at hand for final seasoning.

Assemble Chaat

On a large serving platter or on individual plates, arrange 6 papdi pieces per serving (24 papdis total works for 4 servings). Slightly overlap in a loose circular or grid pattern so each papdi is visible.

Evenly distribute the potato-chickpea mixture over the papdis so most papdis get a bit of potato and chickpea (about 1/4 cup potato-chickpea mixture per serving).

Spoon or drizzle the whisked yogurt over the papdis and potato mixture so each papdi gets a creamy coating. Use about 1/2 cup yogurt per serving (2 cups total divided among 4).

Drizzle tamarind-date chutney in a crisscross pattern over the yogurt (about 2 tablespoons per serving) and then the green cilantro-mint chutney (about 1 tablespoon per serving). Adjust amounts to taste.

Sprinkle finely chopped red onion and tomato evenly across the assembled chaat (about 1–2 tablespoons each per serving).

Generously scatter sev over the top (about 1/4 cup per serving) so it adds crisp texture. Add pomegranate arils if using for bursts of sweetness (about 1 tbsp per serving).

Finish with a light dusting of toasted cumin powder (about 1/4 tsp per serving), chaat masala (about 1/4 tsp per serving), red chili powder (a pinch per serving) and a sprinkle of chopped cilantro.

If serving immediately at the table, pass lemon wedges and additional chutneys. Serve right away so papdi and sev remain crisp.

Optionally tuck a few fresh mint leaves on top for aroma and serve with lemon wedges. Encourage diners to eat quickly — Dahi Papdi Chaat is best enjoyed immediately for maximum crispness.
