Prepare vegetables
Peel the butternut squash, remove seeds, and cut into roughly 2–3 cm (1-inch) cubes (about 1.5 kg raw squash yields good volume). Peel and coarsely chop the onion and carrot. Smash and finely mince the garlic. Peel and grate the ginger (about 1 inch). Rinse and pat dry the curry leaves.
Sweat aromatics
In a large heavy-bottomed pot over medium heat, warm 2 tbs vegetable oil until shimmering. Add the chopped onion and a pinch of salt. Cook, stirring occasionally, until the onion is translucent and beginning to brown at the edges, about 6–8 minutes.
Bloom spices and curry leaves
Add the minced garlic, grated ginger, and the fresh curry leaves to the pot. Stir for 30–60 seconds until fragrant. Add 1 tsp ground turmeric, 1 tsp ground cumin, and 1 tsp mild curry powder. Cook, stirring constantly, for another 30–45 seconds to bloom the spices without burning.
Simmer
Pour in 700 ml vegetable broth and bring the pot to a simmer over medium-high heat. Reduce heat to maintain a gentle simmer, cover partially, and cook until the squash and carrot are very tender when pierced with a fork, about 18–22 minutes.
Blend with coconut milk
Once vegetables are tender, remove the pot from heat. Use an immersion blender to purée the soup directly in the pot until smooth and velvety. Alternatively, transfer soup in batches to a blender and purée, then return to the pot. Stir in 400 ml canned coconut milk until fully incorporated. Re-warm gently over low heat—do not boil—to meld flavors.
Season
Taste and adjust seasoning: add 1.5 tsp salt and 1/2 tsp black pepper (or to taste). If the soup is too thick, thin with up to 100–200 ml additional warm vegetable broth or water to reach desired consistency.
Finishing & garnish
Brighten the soup by stirring in 1 tbsp fresh lime juice off heat. Ladle into bowls.
Garnish each bowl with 2 tbsp chopped fresh cilantro, a sprinkle of toasted coconut flakes (if using), and a pinch (about 1/2 tsp) of chili flakes or a few slices of fresh chili for heat. Finish with an optional 1 tsp drizzle of extra-virgin olive oil.
Serve immediately warm with crusty bread or steamed rice. Leftovers store in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
