Potato Vada (mashed potato patties)
Prepare tempering
Heat 3 tbsp oil in a small skillet over medium heat. When hot, add mustard seeds and let them pop (10–15 seconds). Add cumin seeds, a pinch of hing (if using), and curry leaves. Sauté 15–20 seconds, then add chopped green chilies, minced garlic and grated ginger. Cook 30–45 seconds until fragrant but not browned.
Mix spiced potato
Transfer the tempering into the mashed potatoes. Add turmeric, red chili powder, coriander powder, amchur (or lemon juice), 2 tsp salt and chopped cilantro. Mix thoroughly and taste; adjust salt and tang. Divide mixture into 8 equal portions and shape each into a smooth ball, then flatten slightly to form a thick disc (about 7–8 cm diameter). Place on a tray and refrigerate 10–15 minutes to firm up (helps coating adhere).
Fry vadas
Heat 350–400 ml oil in a deep pan to 170–180°C (340–355°F) or medium heat — oil should shimmer but not smoke. Prepare the batter (see next section). Dip each potato patty into the besan batter, ensuring an even coat, then gently lower into hot oil. Fry in batches, turning once, until golden brown and crisp, about 3–4 minutes per side. Remove to a paper towel-lined rack to drain. Keep warm while you assemble.

Make batter
In a bowl, whisk together 1 cup besan, 2 tbsp rice flour, 0.25 tsp baking soda (if using), 0.25 tsp turmeric, 0.5 tsp red chili powder and 0.5 tsp salt. Add about 3/4 cup water gradually while whisking to form a smooth, thick but pourable batter (similar to pancake batter). Adjust with a tablespoon of water if too thick. Let rest 5 minutes; batter will thicken slightly — add a splash more water to maintain coating consistency.
Chutneys & Condiments
Prepare or arrange chutneys
If making fresh green chutney, blend cilantro, mint, green chili, lemon juice, salt and a little water until smooth. For tamarind-date chutney, thin with water if too thick. Place green chutney, tamarind chutney and dry garlic chutney in small bowls for assembly. Keep pickle/preserved chiles ready for spreading.

Toast pav and butter
Slice each pav bun horizontally without cutting completely through. Heat a large skillet over medium heat and add 1/2 tbsp butter. Place pav cut-side down and toast until lightly golden and crisp. Spread a thin layer of softened butter on the inside of both sides. Repeat for all pavs using remaining butter in small amounts so each is buttery but not greasy.
Assemble Vada Pav
On the bottom half of each buttered pav, spread 1–2 tsp green chutney and 1 tsp tamarind chutney (adjust to taste). Place one hot potato vada in the center. Add a light pinch (about 1–2 tbsp) of crunchy tidbits (sev/farsan) over the vada for texture, then sprinkle 1 tsp dry garlic chutney or red chili powder if desired. Add a small spoonful of pickle or a slice of pickled chili. Close the pav and press gently. Garnish with a few cilantro leaves and serve immediately with lime wedges and extra chutneys on the side.
Serving suggestion
Serve each Vada Pav hot (best immediately) with extra chutneys and lime. For an authentic street-style experience, offer crushed fried green chilies or extra sev for added crunch.
