Toast peanuts (if not roasted)

If your peanuts are raw, dry roast 1/2 cup in a skillet over medium heat for 4–6 minutes, stirring frequently, until golden and aromatic. Let cool and roughly crush.

Chop onions, tomatoes, cucumber, boiled potato, cilantro, green chilies and any optional fruits/veg. Keep ingredients separated in small bowls for quick assembly.

Measure out puffed rice, sev, chutneys, and spices so everything is ready.

Make the seasoning mix

In a small bowl combine tamarind chutney (0.25 cup), green chutney (0.25 cup), lemon juice (2 tbsp), chaat masala (1 tsp), salt (3/4 tsp), red chili powder (1/2 tsp) and roasted cumin powder (1/2 tsp). Taste and adjust sweet-sour-spice balance: add a little more tamarind for sweetness, more green chutney for herbiness, or more lemon for tang.

Assemble Bhel

In a large mixing bowl, add 6 cups puffed rice. Break up any large clusters so the puffed rice is airy and separate.

Add 1 cup chopped onions, 1 cup chopped tomato, 1/2 cup cucumber, 1/2 cup chopped boiled potato (if using), 1/2 cup roasted crushed peanuts, 1/4 cup chopped cilantro, 1 tbsp chopped green chilies and 1 cup sev. Toss gently to combine. Reserve about 2 tablespoons of sev for final garnish.

Pour the prepared chutney-seasoning mixture over the combined ingredients in the large bowl. Fold gently but thoroughly so the puffed rice gets evenly coated without getting soggy. Work quickly — once chutney contacts puffed rice it will start to soften.

Taste and adjust: add additional salt, chaat masala, or lemon juice if desired.

Finish & Serve

Transfer the mixed bhel to individual serving plates or one large platter. Sprinkle reserved sev (about 2 tbsp) and an additional 1/4 cup sev if you like extra crunch on top. Scatter 1/4 cup pomegranate arils and any optional mango or carrot julienne for color and freshness.

Garnish with a few extra cilantro leaves and serve immediately so the puffed rice stays crisp. Provide extra chutneys and lemon wedges at the table for guests to adjust their flavor.

If not serving right away, keep chutneys and dry components separate and assemble within 10–15 minutes of serving to maintain texture.
