Prepare Fruit & Mint
Macerate strawberries
Hull and quarter the fresh strawberries. Place them in a mixing glass or cocktail shaker and add the simple syrup. Gently muddle the strawberries with a muddler or the back of a spoon until they break down and release juice but still have some texture (about 10–15 gentle presses).
Release mint oils
Add the mint leaves to the muddled strawberries. Lightly clap the mint between your palms (optional) then gently press the leaves into the fruit with the muddler 3–4 times to release aroma and oils without shredding the leaves, which can make the drink bitter.
Mix & Build
Add the fresh lime juice to the muddled strawberry-mint mixture and stir briefly to combine. Fill a highball or Collins glass half to three-quarters full with crushed ice.
Spoon the muddled strawberry-mint-lime mixture over the crushed ice in the glass, pressing it down slightly so fruit distributes through the drink.
Garnish & Serve
Garnish with a lime wheel on the rim, a halved fresh strawberry slid onto the rim, and a fresh mint sprig tucked into the top of the drink. Serve immediately with a straw and enjoy.
