Method
Jalapeño Simple Syrup
Make syrup
Slice the jalapeño in half lengthwise and remove seeds if you want milder heat (leave seeds for more heat). Combine sugar and water in a small saucepan and bring to a gentle simmer, stirring until sugar dissolves. Add the jalapeño halves to the syrup, remove from heat, and let steep for 20–30 minutes depending on desired heat. Taste after 15 minutes and remove jalapeño when syrup reaches your preferred heat level. Strain out solids through a fine-mesh sieve and cool. Yield: about 1 cup.
Yellow Bell Pepper Salt
Prepare pepper salt
If using fresh yellow bell pepper, thinly slice and dehydrate in a low oven (175°F/80°C) or dehydrator until completely dry, then grind to a fine powder in a spice grinder. Combine 0.25 cup powdered yellow bell pepper with 2 tsp fine sea salt and 0.25 tsp smoked paprika (optional) in a small bowl. Mix thoroughly and taste; adjust salt or pepper powder if desired. Store in an airtight container. To rim: place a small plate with lime juice or a lime wedge and a second plate with the pepper salt. Moisten the glass rim with the lime, then dip rim into the yellow bell pepper salt to coat evenly.

Fill a rocks or coupe glass with fresh ice if serving on the rocks, or chill the glass in the freezer for a coupe. Moisten the glass rim with lime juice and dip into the prepared yellow bell pepper salt so the rim has an even coating. If using a rocks glass, add fresh serving ice after rimming.
Shake cocktail
In a cocktail shaker, add 2 oz tequila blanco, 0.75 oz fresh lime juice, 0.75 oz jalapeño simple syrup, and 0.5 oz tomato liqueur. Add 6 ice cubes and shake vigorously for about 12–15 seconds until the shaker is well chilled (or about 15–20 seconds if using larger ice).
Adjustments & notes
If the cocktail is too sweet, reduce jalapeño syrup to 0.5 oz and add 0.25 oz additional lime. If not spicy enough, add a dash (about 0.25 oz) of the jalapeño syrup or a muddled jalapeño slice in the shaker. Use a quality tomato liqueur or a savory tomato-based spirit; if unavailable, a small amount (0.25–0.5 oz) of full-flavored tomato shrub or a mezcal-tomato cordial substitute may work — taste and balance accordingly.
