Combine ingredients
In a cocktail shaker add vodka (2 oz), vanilla liqueur (0.5 oz), passion fruit purée (1 oz), fresh lime juice (0.5 oz), simple syrup (0.25 oz) and the pulp from half a fresh passion fruit (0.5 each).
Add ice and shake
Fill the shaker with ice (about 1 cup). Cap and shake vigorously for 12–15 seconds until the shaker is very cold and the outside frosts — this builds dilution and a nice texture.
Double strain and serve
Discard ice from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne and fine mesh strainer to remove seeds and large pulp bits for a smooth finish.
Garnish
Float the remaining half passion fruit (with pulp) on top of the drink, cut side up. If you prefer, spoon a little extra pulp into the center for visual effect.
Side shot
Serve a chilled 2 oz shot of prosecco on the side so the drinker can sip or pour a splash into the martini to brighten the cocktail. Present prosecco in a small chilled shot glass or mini flute.
Finishing
Optionally, give the drinker a small stirrer so they can mix in the prosecco to taste. Serve immediately while cold.
