Place the bottle in the refrigerator for at least 3 hours before serving. If you need it quickly, submerge the bottle in an ice bucket with equal parts ice and water for 20–30 minutes. Target serving temperature is 8–10°C (46–50°F). Use a wine thermometer if available to confirm.

Chill the bottle

Remove foil and wipe the bottle lip with a clean cloth. Use a waiter’s corkscrew to remove the cork carefully to avoid agitation. For a late-harvest Moschofilero, minimal aeration is needed; pour directly into glasses rather than decanting.

Open gently

Pour about 60–90 ml (2–3 fl oz) per glass for a dessert/aperitif pour. Hold the bottle at the base and pour smoothly, stopping before the rim to preserve the wine's aromatics. Leave any heavy sediment (unlikely in a late-harvest white) in the bottle.

Pouring

Present the bottle and describe expected aromatics: floral notes of Moschofilero (rose, citrus blossom), honeyed fruit, ripe stone fruit and balanced sweetness with fresh acidity. Encourage small sips and resting the wine between sips. Offer sparkling water as a palate cleanser between tastings if several wines are sampled.

Tasting notes and enjoyment

Arrange the soft white cheeses and blue cheese (if using) on a small board. Drizzle 1–2 tablespoons of honey over the soft cheeses or serve honey on the side. Scatter the walnuts and sliced stone fruit around the cheeses. Place crackers or toasted baguette slices on the side for spreading and pairing.

Prepare cheese and fruit board

Pair the Noemvris Late Harvest with soft creamy cheeses and honey for a classic combination — the wine’s acidity cuts richness while its sweetness complements honey and ripe fruit. Blue cheese offers a contrasting savory-salty counterpoint; serve smaller bites when pairing with stronger cheeses.

Pairing guidance

Use white wine or small dessert wine glasses to concentrate the aromatic profile. Ensure glasses are clean and at room temperature (no lingering dishwater scents). Refill glasses only after guests have finished most of their previous pour to maintain appropriate portion for a dessert-style wine.

If the bottle is not finished, re-cork and store upright in the refrigerator. Consume remaining wine within 3–5 days; sweetness and aromatics will gradually diminish but will remain pleasant when chilled.
