Chill glass

Place a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice water while you prepare ingredients to chill it.

If using whole limes, roll one on the counter with firm pressure to release juices, then cut and measure fresh lime juice.

Muddling & Mixing

Muddle mint with citrus & sweetener

In a sturdy mixing glass or the chilled serving glass, add the fresh mint leaves, kaffir lime cordial, fresh lime juice, and simple syrup. Gently press and twist the mint with a muddler 6–8 times — enough to release fragrant oils but not shred the leaves (over-muddling makes the drink bitter).

Add rum

Pour the light white rum into the glass with the muddled mint mixture and stir gently for 6–8 seconds to integrate flavors.

Assemble & Serve

Add ice and soda

Fill the serving glass with crushed ice (about 1 cup) then top with approximately 2 oz soda water. Stir gently with a bar spoon 4–5 rotations to lift the mint and chill the drink while keeping carbonation.

Garnish & finish

Slap the mint sprig lightly between your palms to release aromatic oils and place it in the glass along with a lime wheel or wedge on the rim. Optionally, add a second small splash (up to 0.25 oz) of kaffir lime cordial on top for extra fragrance.

Serve immediately with a straw, instructing the drinker to give the mint a gentle stir before sipping.
