Chill glass
Place the wine glass in the freezer for a few minutes or fill with ice water while preparing ingredients so the finished drink stays cold.
Prepare garnish
Thinly slice 4 cucumber slices and set aside a lime wheel or wedge for garnish. Gently slap 6–8 mint leaves between your palms to release aroma; keep a few whole for garnish.
Build the Cocktail
Discard any ice water and add about 1 cup of fresh ice to the chilled wine glass. Add the thin cucumber slices and the gently bruised mint leaves into the glass.
Pour in 0.75 oz elderflower liqueur, 0.75 oz dry white wine and 0.5 oz fresh lime juice directly over the ice, cucumber and mint.
Optional: If you prefer a sweeter aperitivo, add 0.25 oz simple syrup now.
Gently stir the mixture once with a bar spoon to combine the liqueur, wine and lime without completely breaking up the mint.
Top gently with 3 oz chilled Prosecco (or other dry sparkling wine) and 1 oz soda water. Pour the sparkling components slowly over the back of the spoon or down the side of the glass to preserve bubbles.
Give one very gentle stir — 1–2 turns — to integrate the sparkling wine with the base while keeping effervescence.
Taste and adjust: add another 0.25 oz simple syrup if you want it sweeter, or a little more lime (0.25 oz) if you prefer brighter acidity.
