Whisk eggs

Crack the 3 large eggs into a medium bowl. Add 2 tablespoons low-fat milk, 1 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Whisk vigorously until yolks and whites are fully combined and mixture is slightly frothy (about 20–30 seconds). Set aside.

Vegetables & herbs

Prepare vegetables: rinse the baby spinach and pat dry. Halve the cherry tomatoes, finely dice the red bell pepper, thinly slice the green onion, and chop the parsley. If using large spinach leaves, roughly chop so they wilt evenly.

Sauté vegetables: heat a nonstick 8–10 inch skillet over medium heat. Add 1 teaspoon olive oil and 1 teaspoon butter. When butter has melted and starts to foam, add the diced red bell pepper and sliced green onion. Sauté 1–2 minutes until slightly softened.

Add spinach and tomatoes to the skillet and cook another 1–2 minutes, stirring frequently, until spinach is wilted but still bright green and tomatoes are just warmed. Transfer the vegetables to a small bowl and set aside. Leave the pan over low heat.

Prepare protein and cheese: if using cooked chicken or turkey, warm and shred or dice it into small pieces so it folds easily into the omelette. Measure out 1/4 cup cottage cheese; drain any excess liquid by pressing lightly with a spoon or paper towel if necessary.

Cooking the omelette

Heat the pan: increase heat to medium-low. Add a little additional nonstick spray or 1/2 teaspoon butter if the pan looks dry. Pour the whisked egg mixture into the skillet and let it sit undisturbed for 10–15 seconds until the edges begin to set.

Gently stir: using a rubber spatula, gently push the set edges toward the center while tipping the pan so uncooked egg flows to the edges. Do this for about 20–30 seconds to create a slightly creamy curd.

Add filling: when the eggs are mostly set but slightly moist on top, evenly distribute the sautéed vegetables, shredded chicken (if using), and dollops of cottage cheese over one half of the omelette. Sprinkle chopped parsley on top of the filling.

Fold and finish: using the spatula, carefully fold the empty half of the omelette over the filling. Let cook 30–60 seconds more, then tilt the pan and gently press so the folded omelette contacts the pan to finish setting. Total cook time after adding eggs should be 2–3 minutes to keep the interior tender and not dry.

Slide and rest: slide the omelette onto a plate. Let rest 1 minute to allow residual heat to finish melting cottage cheese and to let flavors meld.

Serve: garnish with extra chopped herbs and a few drops of hot sauce or a sprinkle of red pepper flakes if desired. Serve immediately with whole-grain toast or a side salad for a complete healthy meal.
