Prepare glass

Chill a coupe or martini glass by filling it with ice and cold water, or place it in the freezer for a few minutes while you prepare the cocktail.

Measure and combine

Add 2 oz London dry gin, 0.75 oz fresh lime juice, and 0.75 oz simple syrup into a cocktail shaker.

Add ice and shake

Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 10–15 seconds until the outside of the shaker is very cold and the mixture is well chilled and slightly diluted.

Strain

Discard ice/water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne and fine mesh strainer (or fine strainer alone) to remove ice shards and pulp for a smooth texture.

Garnish and serve

Express the oils from a lime twist over the surface or float a lime wheel on top. Serve immediately.
