Cocktail
Garnish & Finish
Method
Cocktail
Add 2 oz dark rum, 0.5 oz fig liqueur (or fig syrup), 0.75 oz fresh lime juice, 0.25 oz simple syrup, and 2 dashes Angostura bitters into a cocktail shaker.
Dry Shake
Seal the shaker and dry-shake vigorously (no ice) for 15–20 seconds to emulsify the egg white and integrate the ingredients. This creates a smooth foam.
Shake with Ice
Open the shaker, add ice (enough to fill the shaker), and shake hard for 10–15 seconds until well chilled (exterior becomes frosty).
Strain the cocktail into a chilled rocks glass over a large ice cube (or into a coupe for a neat serve if you prefer no ice). Use a fine strainer if you want a silky texture.
Garnish & Finish
Float the fresh fig slice on the foam or rest it on the ice. Express a lime twist over the drink (squeeze to release oils) and drop it in.
Add 1 dash of Angostura bitters onto the foam (if present) for aroma and a decorative pattern. Serve immediately.
