Toast bread

Lightly butter one side of all 6 bread slices with the softened butter. Toast the bread in a skillet over medium heat, or in a toaster, buttered side down until golden and crisp (about 2–3 minutes per side if using a skillet). Set toasted slices on a rack so they remain crisp.

Cook bacon

Place bacon slices in a cold skillet, then turn heat to medium. Cook, turning occasionally, until evenly browned and crisp, about 7–10 minutes. Transfer bacon to paper towels to drain.

Slice tomato & season

Thinly slice the tomato into 4–6 slices. Lightly season tomato slices with about 1/4 tsp of the kosher salt and a pinch of black pepper. Keep on a plate while assembling.

Assemble sandwiches

Prepare spread

In a small bowl combine the mayonnaise and Dijon mustard. Taste and adjust: add remaining salt and pepper sparingly if desired. Spread about 1 tsp of the mayo-mustard mixture on the unbuttered side of each toasted bread slice (use 3 slices as bottoms and 3 as middle/top pieces).

First layer

Place one toasted slice (mayo side up) on your work surface. Layer 80–85 g (roughly 1/3 of the turkey) of sliced turkey evenly, then add one slice of cheese on top of the turkey. Add two lettuce leaves (or one folded leaf) and one or two tomato slices. Lightly press down to compact.

Middle slice

Place a second toasted slice (mayo side down) on top of the tomato (mayo side should contact the tomato). Spread a small amount of mayo on the top of this middle slice as well. On that middle slice, layer 50–60 g of ham and 2 slices of bacon (or 3 if preferred). Add an additional lettuce leaf if desired.

Top layer

Cap the sandwich with the third toasted slice (buttered side out, mayo side down). Press gently to compress the three-layer stack into a compact sandwich.

Finish & secure

Using a sharp knife, cut the sandwich diagonally into 2 triangles (for a single club) or into quarters on the diagonal if assembling multiple clubs for serving. Insert a toothpick or skewer through each finished triangle to hold layers together. Repeat assembly to make 2 full club sandwiches (each using 3 slices of bread) — this recipe yields 2 servings.

Arrange sandwiches on plates with pickles and chips or fries on the side. Serve immediately while bread and bacon are warm and crisp. If preparing ahead, keep components separate and assemble just before serving to preserve crunch.
