Prepare Glass

Chill a coupe or martini glass by placing it in the freezer for 5–10 minutes or fill it with ice water while you mix the cocktail.

Combine Ingredients

In a cocktail shaker, add 2 oz Beluga vodka, 0.5 oz dry vermouth, 0.5 oz fresh lemon juice, 0.25 oz simple syrup and 2 dashes orange bitters. If using egg white for a silky texture, add 0.5 of an egg white now.

Dry Shake (if using egg white)

If you added egg white, dry shake (shake without ice) vigorously for 10–15 seconds to emulsify and create foam. If not using egg white, skip to the next step.

Wet Shake

Add ice (about 6 large ice cubes) to the shaker and shake vigorously for 12–18 seconds until well-chilled and the shaker is frosty on the outside.

Strain

Discard the ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any coagulated egg white bits.

Garnish & Finish

Express the oils from one lemon twist over the surface of the drink by holding the twist over the glass and gently squeezing to release oils, then run the twist around the rim and drop it into the cocktail as a garnish.

If desired, lightly sprinkle a very small pinch (about 0.1 tsp) of edible gold flake onto the surface for a premium, decorative finish. Serve immediately.
