Prepare the Potatoes

Peel the russet potatoes and cut them into 1-inch cubes.

Season the Potatoes

In a large bowl, toss the potato cubes with olive oil, salt, black pepper, paprika, and garlic powder until evenly coated.

Bake the Potatoes

Preheat the oven to 425°F (220°C). Spread the potatoes in a single layer on a baking sheet. Bake for 30-35 minutes, flipping halfway through, until crispy and golden brown.

Sauté the Aromatics

In a saucepan, heat 2 tbsp of olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until soft.

Add Garlic and Tomatoes

Add the minced garlic and cook for another minute. Then, add the crushed tomatoes, smoked paprika, cayenne pepper, salt, and sugar. Stir to combine.

Simmer the Sauce

Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally until thickened.

Aioli

Prepare the Aioli

In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well until smooth.

Chill the Aioli

Cover the bowl with plastic wrap and refrigerate until ready to serve.
