Preparation of Ceviche

Prepare the Fish

Cut the fresh fish into small bite-sized cubes (about 1/2 inch).

Marinate the Fish

In a glass or ceramic bowl, combine the fish cubes, lime juice, lemon juice, and salt. Stir gently to ensure the fish is well coated in the citrus juices.

Add Vegetables

Add the finely chopped red onion, chopped cilantro, and jalapeño pepper to the fish mixture. Mix well and cover the bowl with plastic wrap.

Chill

Refrigerate the ceviche for at least 30 minutes, or until the fish appears opaque and is 'cooked' through by the citrus juices.

Cook Sweet Potatoes

In a pot, bring water to a boil and add the cubed sweet potatoes. Cook for about 15 minutes or until they are tender. Drain and set aside.

Prepare Corn

If using fresh corn, boil the corn kernels in salted water for about 5 minutes. If using canned corn, simply drain and rinse.

Serving

Serve the Ceviche

Once the ceviche is ready, serve it in bowls with the cooked sweet potatoes and corn on the side. Garnish with avocado slices if desired.
