Prepare oven and pans

Preheat the oven to 350°F (175°C). Grease two 8- or 9-inch round cake pans and line the bottoms with parchment paper; grease the parchment and dust lightly with flour or cocoa powder.

Whisk together the dry ingredients: in a large bowl, sift or whisk 1 3/4 cups all-purpose flour, 3/4 cup unsweetened cocoa powder, 1 1/2 tsp baking powder, 1 1/2 tsp baking soda, and 3/4 tsp fine salt until uniform.

In a separate large bowl, combine wet ingredients: whisk 1 1/2 cups granulated sugar and 1/2 cup vegetable oil until combined; add 2 large eggs one at a time, whisking after each until smooth. Whisk in 1 cup whole milk and 2 tsp vanilla extract.

Add the dry mixture to the wet mixture in two additions, stirring gently until just combined and no large streaks of flour remain. Scrape the bowl to ensure even mixing.

Whisk in 3/4 cup hot water (near-boiling) gradually: pour slowly while mixing at low speed or with a whisk. The batter will be thin — this is normal and yields a moist, tender cake.

Divide batter evenly between prepared pans (use a scale or measure by eye). Tap pans gently on the counter to remove large air bubbles.

Bake in preheated oven for 28–35 minutes, rotating pans front-to-back halfway through, until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter) and the cakes spring back slightly when touched.

Remove cakes from oven and let rest in pans on a wire rack for 10 minutes. Run a knife around the edges, invert onto racks, remove parchment, and cool completely (at least 1 hour) before filling and frosting.

Chocolate Ganache (for topping and filling)

Chop chocolate: place 8 oz chopped semisweet or bittersweet chocolate in a heatproof bowl; fine chop ensures even melting.

Heat cream: in a small saucepan, warm 3/4 cup heavy cream over medium heat until it just begins to simmer and small bubbles form around the edges (do not boil). Remove from heat.

Make ganache: pour hot cream over the chopped chocolate and let sit for 1–2 minutes to soften. Add 2 tbsp unsalted butter and 1/8 tsp fine salt, then stir gently from the center outward until smooth and glossy. If you need a spreadable but firmer ganache for filling, let it cool at room temperature for 20–30 minutes, stirring occasionally. For a pourable glaze, use it warm.

Syrup (optional, for moistening layers)

Combine syrup ingredients: stir together 1/2 cup strong brewed coffee, 2 tsp granulated sugar, and 1 tsp rum (if using) until the sugar dissolves. Taste and adjust — syrup should be slightly sweet and coffee-forward.

Brush on cakes: when cake layers are cooled, use a pastry brush to lightly brush the syrup over cut sides of each layer to add moisture and depth of flavor. Use about half the syrup on the bottom layer and the rest on the top layer as needed.

Assembly & Finish

Level cakes if needed: if the cake tops domed while baking, level them with a serrated knife or cake leveler so layers sit flat.

Fill: place one cake layer on a serving plate or cake board, cut-side up or down according to your preference. Spread about one-third to one-half of the ganache over the layer using an offset spatula to an even thickness.

Stack: place the second cake layer on top, press gently to adhere. If you prefer more filling, split ganache accordingly.

Frost/Glaze: pour warm ganache over the top of the stacked cake and spread with an offset spatula, allowing ganache to drip slightly down the sides for a smooth finish. For a more polished look, chill the cake for 10–15 minutes, then apply a second thin coat of ganache if desired.

Decorate: dust the top lightly with 1 tsp cocoa powder and scatter 1/4 cup chocolate shavings or curls around the edge or center as desired.
