Cook sushi rice

Rinse the short-grain rice under cold water until the water runs clear. Drain and combine with 1.1 cups water in a small pot. Bring to a boil, then reduce to a very low simmer, cover and cook 12–14 minutes until water is absorbed. Remove from heat and rest, covered, 10 minutes.

Season rice

While rice rests, warm rice vinegar, sugar and 1/2 tsp salt just until sugar dissolves. Fold mixture gently into the warm rice with a wooden spoon or rice paddle, fanning to cool to room temperature. Keep slightly warm; cover with a damp cloth.

Prepare tuna and shape nigiri

Slice the tuna into twelve 1/4–1/2-inch thick slices (about 12 pieces, ~1 oz each). Wet hands lightly with water mixed with a pinch of salt. Divide rice into 12 portions (~1.5 tbsp each) and form compact oval nigiri rice mounds with gentle pressure.

Sear tuna

Heat a heavy skillet or cast-iron pan over high heat until smoking. Add 2 tsp neutral oil and swirl. Quickly sear tuna slices 7–10 seconds per side for a thin browned edge while keeping the center raw (adjust to desired doneness). Remove and rest on a tray. Slice thicker pieces if needed to fit nigiri.

Assemble nigiri

Brush or dab a small amount of anticuchero sauce (see below) lightly on the seared side of each tuna slice. Place the tuna slice over each rice mound, pressing gently to adhere. Reserve remaining sauces for topping.

Anticuchero Sauce (Peruvian-style, slightly spicy)

Make the sauce: In a small blender or bowl, combine 2 tbs aji panca paste, 2 garlic cloves (minced), 1 tbs red wine vinegar, 3 tbs olive oil, 1 tsp smoked paprika, 1/2 tsp ground cumin, 1/2 tsp honey, 1 tbs fresh lime juice, 1/2 tsp salt and 1/4 tsp black pepper. Blitz until smooth and emulsified. Taste and adjust acidity or salt. Transfer half to a squeeze bottle or small bowl for brushing; keep some for drizzling on the plate.

Warm and finish (optional): For a slightly mellower sauce, warm a tablespoon in a small pan for 20–30 seconds before brushing on tuna.

Chimichurri Nikkei (Japanese-Peruvian herb sauce)

Prepare the chimichurri-style nikkei: Finely chop parsley, cilantro, shiso (if using) and scallion whites/greens. In a bowl or small processor, combine herbs, 1 garlic clove, 1 tsp rice vinegar, 1 tsp soy sauce, 1/2 tsp sesame oil, 3 tbs olive oil, 1/8 tsp red pepper flakes, 1/4 tsp salt and 1 tsp fresh lime juice. Pulse briefly to a coarse, loose salsa consistency — do not over-process into a paste. Taste and adjust with a pinch of salt or lime if needed.

Dress the nigiri: Spoon or dot small amounts (about 1/2 tsp) of chimichurri nikkei on top of each seared tuna nigiri, or pipe thin lines alongside as a contrasting garnish.

Finishing & Garnish

Garnish and oil: Lightly brush any remaining anticuchero sauce across the serving plate. Drizzle a few drops of truffle oil over each nigiri (a little goes a long way). Sprinkle toasted white and black sesame seeds over the tuna and rice. Top some pieces with microgreens or a small shiso leaf.

Serve: Arrange 12 nigiri on a platter. Provide wasabi and pickled ginger on the side. Serve immediately so the seared edge stays warm and the rice retains tenderness.
