Prep fish

Pat corvina fillets dry with paper towels. If fillets are large, cut into 6 taco-sized pieces (about 3–4 oz each). Season both sides evenly with 1 tsp salt and 1/2 tsp black pepper.

Set up breading station

Place flour in a shallow dish. Beat the 2 eggs in a second shallow dish. In a third dish, combine panko breadcrumbs, cornmeal (if using), and a pinch of salt and pepper.

Bread the fish

Dredge each piece first in flour (shake off excess), then dip into beaten eggs, and press into panko mixture until well coated. Place breaded pieces on a tray and rest 5 minutes so coating adheres.

Fry or pan-sear

Heat a large skillet over medium-high heat and add 1/2 cup neutral oil. When oil shimmers (about 350°F if using a thermometer), add breaded fish in a single layer without crowding. Fry 2–3 minutes per side until golden brown and internal temperature reaches 135–140°F (or fish is opaque and flakes easily). Transfer to a wire rack or paper towel-lined plate. For fewer calories, shallow-fry using less oil, or oven-bake at 425°F for 10–12 minutes flipping once.

Finish

Squeeze lemon wedges over the cooked fish pieces just before serving.

Tartar Sauce (Nikkei-influenced)

In a small bowl combine 1/2 cup mayonnaise, 3 tbsp diced dill pickle, 2 tbsp diced red onion, 1 tbsp chopped capers, 1 tbsp yuzu or lemon juice, 1/2 tsp soy sauce and 1/4 tsp sugar. Mix until homogenous and season with 1/4 tsp freshly ground black pepper. Taste and adjust acidity or salt as needed. Chill until service.

Chimichurri Nikkei

In a food processor or finely chop by hand: combine 1/2 cup parsley, 1/4 cup cilantro, 2 scallions (green parts), 2 garlic cloves, and 1/2 red chili (or 1 tsp red pepper flakes). Pulse or mince to a coarse texture. Transfer to a bowl and stir in 1 tbsp rice vinegar, 1 tsp soy sauce, 3 tbsp olive oil, 1/2 tsp sesame oil, 1/2 tsp salt and 1/4 tsp black pepper. Let sit 10–15 minutes for flavors to marry. Adjust oil or vinegar to reach spoonable but not watery consistency.

Optional Taco / Lettuce Wrap & Spicy Mayo

If serving as tacos or lettuce wraps, warm tortillas briefly in a dry skillet (20–30 sec per side) or separate and rinse lettuce leaves and pat dry.

Spread about 1 tbsp spicy mayo onto each tortilla or leaf. Place a small handful (about 1/6 of shredded cabbage) of shredded cabbage or lettuce, then add one piece of breaded corvina. Top with 1 tbsp tartar sauce and 1–2 tsp chimichurri nikkei. Garnish with pickled red onion and cilantro leaves. Serve immediately with lemon wedges.

Chicken Taco Option (if chosen)

For the chicken taco alternative: season 1 lb thinly sliced chicken with 1/2 tsp salt, 1/4 tsp black pepper and 1/2 tsp garlic powder. Heat 1 tbsp neutral oil in a skillet over medium-high heat. Cook chicken in a single layer 3–5 minutes, stirring or flipping, until cooked through and lightly browned. Toss cooked chicken with a little spicy mayo (to taste) before assembling the taco as above, then top with tartar and chimichurri if desired.
