Prep and marinate

Pat the chicken tenders dry with paper towels. If using thick strips, pound gently to an even thickness about 1/2 inch. In a shallow bowl whisk together the buttermilk and eggs until combined. Add 1/2 tsp kosher salt and 1/4 tsp black pepper to the mixture. Add the chicken to the buttermilk-egg mixture, cover and refrigerate for 20–30 minutes (or up to 2 hours) to tenderize and help coating adhere.

Make the pretzel crust

Place the pretzels in a food processor and pulse to coarse crumbs (some small chunks are fine). Transfer to a bowl and stir in panko (if using), grated Parmesan, garlic powder, onion powder, smoked paprika and remaining 1/2 tsp kosher salt. Mix thoroughly so seasoning is evenly distributed.

Dredge the chicken

Place flour in a shallow dish and season with a pinch of salt and pepper. Remove one piece of chicken from the buttermilk mixture, allow excess to drip off, dredge in flour, then return briefly to the buttermilk (or skip second dip if very wet) and press firmly into the pretzel mixture, coating all sides and pressing crumbs to adhere. Set coated tenders on a wire rack and repeat with remaining pieces. For best adhesion let coated chicken rest 10 minutes in the fridge.

Heat oil and fry

Pour oil into a heavy skillet (cast iron preferred) to a depth of about 1/2 inch. Heat over medium-high until oil reaches 350°F (175°C) or a small breadcrumb sizzles immediately when dropped in. Fry tenders in batches without crowding—about 3–4 minutes per side depending on thickness—until golden brown and internal temperature reaches 165°F (74°C). Adjust heat to maintain oil temperature. Transfer cooked tenders to a paper towel–lined baking sheet or wire rack and let rest 2–3 minutes.

Oven-finish option

For a slightly lighter finish, preheat oven to 400°F (200°C). After frying 1–2 minutes per side just to set crust, transfer to a baking sheet and finish in oven 8–10 minutes until internal temp 165°F. This reduces oil absorption while ensuring cooked-through centers.

Make-ahead/keeping warm

Keep finished tenders warm on a baking sheet in a 200°F (95°C) oven up to 20–30 minutes. Re-crisp in a 375°F oven for 5–7 minutes if needed.

Whisk together Dijon mustard, yellow mustard, honey, mayonnaise, and apple cider vinegar in a small bowl until smooth. Taste and adjust seasoning with salt, pepper and optional hot sauce. If the sauce is too thick, thin with 1/2 tsp water at a time to reach desired consistency. Chill at least 10 minutes to let flavors meld before serving.
