Method
Garlic crema
Make the garlic crema
In a small bowl combine 1/2 cup sour cream, 2 tsp mayonnaise, minced garlic clove, 1 tbsp fresh lime juice and 1/4 tsp salt. Whisk until smooth. If the mixture is too thick for drizzling, add up to 1 tsp water, 1/4 tsp at a time, until it reaches a thin drizzling consistency. Taste and adjust salt or lime.
Sautéed corn (Mexican street corn style)
Cook the corn
Heat a large nonstick or cast-iron skillet over medium-high heat. Add 1 tsp vegetable oil and 1 tbsp unsalted butter. When butter is foaming, add 2 cups corn kernels in a single layer as much as possible. Let the corn sear undisturbed for 2–3 minutes to develop color, then stir and continue cooking for another 3–4 minutes until some kernels are nicely charred. Stir in 1/2 tsp ground cumin, 1/4 tsp cayenne, 1/2 tsp kosher salt and 1/4 tsp black pepper. Cook 30–60 seconds more to bloom the spices. Remove from heat and set aside.

Prep vegetables and lime
While the corn cooks, dice 1 cup seeded roma tomato and 1/2 cup finely diced red onion. Chop 1/4 cup cilantro. Juice 2 limes and reserve 1 tbsp of the juice for the garlic crema (included above); the remainder (about 1.5 tbsp) will be used to toss with tomatoes and beans. In a bowl, combine diced tomato, red onion, cilantro and the remaining lime juice; season with a pinch of salt and stir.
Assemble nachos
Layer chips and toppings
Preheat oven to 375°F (190°C). On a large baking sheet or oven-safe platter, spread 12 cups of corn tortilla chips in an even layer. Sprinkle half of the 2 cups four-cheese blend evenly over chips. Scatter 1 cup drained and rinsed black beans over the cheese, then spoon the sautéed corn evenly across the tray. Add the remaining cheese on top so it melts over the corn and beans.
Bake to melt cheese
Place the assembled nachos in the preheated oven for 6–8 minutes, or until the cheese is fully melted and bubbling but chips are not burnt. Keep an eye to avoid over-browning.
Finish with fresh mix-ins and crema
Remove nachos from oven. Immediately scatter the dressed tomato-onion-cilantro mix over the hot nachos. Dollop or drizzle the prepared garlic crema evenly across the tray (use a spoon or squeeze bottle). Sprinkle 1/2 cup crumbled queso fresco over the top. If using, add thinly sliced jalapeño and a light dusting of smoked paprika for color and smoky flavor. Finish with an extra squeeze of lime over the whole platter.
Serve
Serve the nachos hot with extra lime wedges on the side. Encourage guests to shovel from the center outward so fresh toppings are distributed. Leftovers can be refrigerated up to 1 day; reheat in a 350°F oven for 8–10 minutes to revive crispness.
