Prepare proteins & vegetables
If using wooden skewers, soak them in water 30 minutes to prevent burning. Slice the spicy smoked sausage into 1/2" rounds. Halve and seed jalapeños if you want milder heat; keep seeds if you prefer extra spice. Break cauliflower into bite-sized florets. Trim and debone cajun wings (or use boneless thigh pieces) and cut into 1" chunks.
Breading & Batter for Cauliflower (Buffalo Cauliflower Bites)
Make batter
In a medium bowl whisk together flour, cold water, garlic powder, onion powder, smoked paprika, salt and black pepper until a smooth, slightly thick batter forms (consistency like heavy cream). Stir in 1 tablespoon hot sauce.
Coat cauliflower
Toss cauliflower florets in the batter to coat evenly, then shake off excess. Arrange coated florets on a parchment-lined baking sheet or air-fryer basket. Drizzle or brush with 2 tablespoons olive oil to help crisping.
Cook cauliflower
Oven method: roast at 425°F (220°C) for 20–25 minutes, flipping once, until edges are browned and crisp. Air-fryer method: cook at 400°F (200°C) for 12–15 minutes, shaking halfway, until crisp. After cooking, toss warm cauliflower lightly with 1 tablespoon hot sauce (additional for buffalo flavor) to glaze.
Cajun Wing Seasoning & Marinade
Marinate chicken pieces
In a small bowl combine cajun seasoning, paprika, garlic, 1 tablespoon olive oil and lemon juice. Toss the 12 oz chicken pieces in the marinade and let rest 10–15 minutes (or up to 1 hour in fridge) to absorb flavor.
Cook chicken
Sear or grill the marinated chicken pieces over medium-high heat about 2–3 minutes per side until nicely charred and internal temperature reaches 165°F (74°C). Remove and let rest briefly before skewering.
Assemble & Grill Skewers
Assemble final skewers
If cauliflower was cooked separately, thread cooled buffalo cauliflower bites onto skewers in their designated spots. Arrange all components so each skewer has roughly equal portions.
Grill or broil skewers
Preheat grill or broiler to high. Lightly brush skewers with 1 tablespoon melted butter. Grill skewers 2–3 minutes per side just to warm through, crisp edges and slightly caramelize surfaces (total 6–8 minutes). Watch jalapeños so they blister but do not burn. If using a broiler, place on a foil-lined sheet 4–6 inches from heat and broil 4–6 minutes, turning once.
Hot Honey & Glaze
Make hot honey
In a small saucepan combine 3 tablespoons honey, 1 teaspoon hot sauce (or chili garlic sauce), 1 tablespoon butter and 1 teaspoon apple cider vinegar. Warm gently over low heat, stirring until butter melts and honey is thin and glossy. Taste and adjust heat or vinegar balance. Keep warm.
Hot Honey Cheese Curd Topping
Prepare curd topping
Toss 6 oz fresh cheese curds with 2 tablespoons of the warm hot honey and a light sprinkle of cracked black pepper. The curds should be lightly coated but still retain shape.
Finishing & Serving
Leftovers: store components separately (skewered items, extra hot honey, cheese curds) in sealed containers in the refrigerator up to 2 days. Reheat skewers in a 350°F oven for 8–10 minutes and re-glaze before serving.
