Make berry puree
Place 1/2 cup mixed berries (fresh or thawed frozen) in a blender and pulse until smooth. Strain through a fine-mesh sieve into a bowl pressing with the back of a spoon to extract about 1/2 cup of puree and discard seeds. Chill if not using immediately.

Juice oranges and lemons to measure 1 cup fresh orange juice and 1/4 cup fresh lemon juice. Combine juices in a pitcher with the 1/2 cup berry puree and 2 tablespoons simple syrup. Stir well to combine and taste; adjust sweetness with up to 1 more tablespoon simple syrup if desired.

Right before serving, add 1 cup chilled club soda (and 1/2 cup non-alcoholic sparkling wine if using) to the juice-puree mixture. Stir gently to preserve carbonation. Add 2 teaspoon bitters and stir once more to integrate — bitters add depth; use non-alcoholic bitters if you require fully alcohol-free ingredients.

Fill four tall glasses evenly with ice (approximately 1/2 cup ice per glass).

Divide the mocktail mixture among the glasses, pouring gently to keep fizz. Float 1 orange slice and 2 fresh berries in each glass.

Smack a mint sprig lightly between your palms to release oils, then tuck one sprig into each glass as a garnish. Optionally, run an orange slice around the rim before placing it for extra aroma.
