Honey-Agave Syrup

Make syrup
Combine honey, agave nectar and warm water in a small bowl or jar. Stir or whisk until the honey fully dissolves and the mixture is smooth. Let cool to room temperature (5 minutes). This creates a pourable sweetener that blends easily into cold liquids.

Brew and cool hibiscus tea
Steep 1.5 cups boiling water with 2 tbs dried hibiscus petals (about 2 tsp if finely chopped) for 6–8 minutes to make a strong infusion. Strain and cool to room temperature or chill briefly in the fridge. (If using ready-made hibiscus tea, measure 1.5 cups cooled.)

Juice citrus
While the tea cools, squeeze fresh lemons and oranges. You need about 0.75 cups lemon juice (≈3–4 lemons depending on size) and 0.75 cups orange juice (≈1–2 oranges). Strain to remove seeds and excess pulp if desired.

Combine base ingredients
In a large pitcher, combine the cooled hibiscus tea, lemon juice, orange juice and 0.25 cups honey-agave syrup. Stir vigorously until evenly mixed. Taste and adjust sweetness by adding up to 1–2 additional tablespoons of honey-agave syrup if you prefer sweeter.
Assemble & Serve

Fill 4 serving glasses with ice (about 1/2 cup ice per glass). Pour the refresher base evenly into the glasses, filling each glass about two-thirds full.

Top each glass with cold sparkling water (about 1/4 cup per glass) to add effervescence. Gently stir once to combine so carbonation remains.

Serve immediately chilled. Stir before sipping if it has sat for a few minutes to remix any settled syrup.
