    Brew the tea

    Bring 4 cups of filtered water to a near boil (about 200°F / 93°C). Add 3–4 teaspoons of strong black tea leaves or 4 black tea bags. Steep 4–6 minutes for a robust, slightly bitter base. Strain leaves (if used) and return the brewed tea to a heatproof container.

    Concentrate & sweeten

    In a small saucepan over low heat, combine 2 cups brewed tea (reserved from the 4 cups) and the 2 tablespoons light brown sugar, 1 tablespoon brewed-tea-equivalent (see note) of dark brown sugar, and 1 teaspoon molasses. Stir gently until sugars and molasses dissolve, about 2–3 minutes. Remove from heat. This creates a slightly viscous brown-sweet concentrate that gives the drink its signature depth.

    If you prefer a less sweet drink, reduce brown sugars by half. Add a pinch of fine sea salt to the concentrate and stir to balance bitterness and amplify flavors.

Aromatics & Finish

    Combine and chill

    In a pitcher, combine the remaining 2 cups of brewed tea and 2 cups filtered water. Stir in the brown-sugar-molasses concentrate until fully incorporated. Taste and adjust sweetness or strength by adding more brewed tea (for stronger) or water (for weaker).

    Add brighteners

    Stir in 1 tablespoon fresh lemon juice and 1 teaspoon vanilla extract to lift the flavors and add complexity. Mix well.

    Serve

    Fill a glass with about 1 cup of ice cubes. Pour 12–14 ounces of the prepared brown water over the ice. If using alcohol, add 1 ounce of whiskey or dark rum and stir gently. Garnish with a thin lemon slice if desired.

    Store any leftover brown water in a sealed container in the refrigerator for up to 3 days. Shake or stir before serving, as the molasses may settle slightly.
