Brokers Gin Cocktail

Spiced Simple Syrup
Combine and heat
In a small saucepan combine sugar and water. Add whole cloves, cinnamon stick, a pinch of freshly grated nutmeg and the orange zest if using.
Bring mixture to a gentle simmer over medium-low heat, stirring until the sugar is fully dissolved. Do not boil vigorously — simmer for 4–5 minutes to allow the spices to infuse.
Remove from heat and let the syrup cool with the spices steeping for at least 20 minutes (up to 1 hour for stronger flavor).
Strain the syrup through a fine mesh sieve to remove cloves, cinnamon and zest. Transfer to a clean bottle or jar. Refrigerate; syrup will keep 10–14 days.
Brokers Gin Cocktail
Chill: If you prefer, chill a coupe or rocks glass by filling with ice and water while you prepare the cocktail. Discard chilling ice/water before serving.
Build and shake: Into a cocktail shaker add 2 oz Brokers Gin, 1 oz fresh orange juice (strain to remove pulp if desired), 0.5 oz spiced simple syrup, and 2 dashes orange bitters. Fill the shaker with ice (about 1 cup).
Shake vigorously for 12–15 seconds until the shaker is very cold and the exterior is frosted. This both chills and slightly dilutes the drink for balance.
Fine strain (or double strain if you used fresh-squeezed juice) into the chilled coupe or an old-fashioned glass over fresh ice, depending on preference.
Garnish: Express an orange peel over the drink to release oils, rim the glass with the peel, then drop the twist into the cocktail as garnish.
Serve immediately.
