Honey Cinnamon Simple Syrup

Make syrup
Combine 0.5 cup honey and 0.5 cup water in a small saucepan. Add 1 tsp ground cinnamon and the optional cinnamon stick. Warm gently over low heat, stirring until the honey fully dissolves and the mixture is homogenous (do not boil). Simmer very gently for 3–4 minutes to infuse cinnamon, then remove from heat and cool to room temperature. If you used a cinnamon stick, strain it out. Transfer syrup to a clean jar and refrigerate. Yields about 6 oz; keeps 2 weeks refrigerated.

Emulsify apple butter
Add one large scoop of ice to the shaker (about 6 standard ice cubes). Very important: dry-shake is optional for better integration — if you have a shaker with a tight seal, first shake without ice vigorously for 10 seconds to start emulsifying the thick apple butter, then add ice and continue. If skipping dry shake, add ice immediately and proceed.

Shake hard
Shake the filled shaker vigorously for 12–18 seconds until the exterior of the shaker is frosty and the mixture is well emulsified and chilled. The goal is a smooth, slightly frothy texture from the apple butter and syrup.

Double strain and pour
Discard ice or water from the chilled glass. Double-strain the cocktail through a fine mesh strainer (and the shaker strainer) into the coupe to remove any apple butter solids and small ice shards, producing a silky texture.

Optional espresso rinse/float
For a stronger espresso note, either rinse the glass with 0.25 oz chilled espresso before pouring (swirl and discard most, leaving aroma) or float 0.25 oz chilled espresso on top gently poured over the back of a spoon.
Garnish & Serve

Lightly dust 1 tsp ground cinnamon over the surface of the cocktail. Float three whole coffee beans on top. Garnish the rim with a thin apple slice or place it on the glass. Serve immediately.
