Combine dry ingredients
In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

Mix wet ingredients
In a medium bowl or large measuring cup whisk the whole milk, large egg, melted butter, and vanilla extract until smooth and slightly frothy.

Make batter
Create a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula or wooden spoon until just combined; a few small lumps are fine. Do not overmix or the pancakes will be tough.

Fold in cereal
Gently fold 1 cup of the Fruity Pebbles cereal into the batter until distributed. The cereal will soften a little from the batter but should keep some crunch. Let the batter rest 5 minutes while you heat the griddle.

Preheat griddle
Heat a nonstick griddle or large skillet over medium heat (about 350°F / 175°C if using a thermometer). Brush or wipe a thin film of vegetable oil over the cooking surface to prevent sticking.

Cook pancakes
For each pancake, pour about 1/4 cup of batter onto the hot griddle, spacing them to allow spreading. Immediately sprinkle a small pinch (about 1 tablespoon per pancake) of the reserved 1/2 cup Fruity Pebbles on top of each pancake to keep the colorful crunchy topping. Cook until bubbles form across the surface and edges look set, 2–3 minutes.

Flip and finish
Use a thin spatula to flip each pancake and cook until the second side is golden brown, about 1–2 minutes more. Transfer cooked pancakes to a warm plate and keep loosely covered while you cook remaining batter.

Notes on texture
Because Fruity Pebbles contain sugar and color, pancake batter may brown slightly faster; if pancakes are browning too quickly, reduce heat to medium-low. For softer pancakes, fold in cereal at the last moment and avoid overmixing.
