Method

Preparation of Salmon

Preheat the Oven

Preheat your oven to 400°F (200°C).

Prepare Honey Dijon Glaze

In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and black pepper until well combined.

Coat Salmon Fillets

Place the salmon fillets on a baking sheet lined with parchment paper. Brush the honey Dijon glaze generously over each fillet.

Crust with Pistachios

Evenly sprinkle the crushed pistachios over the glazed salmon, pressing gently to adhere.

Bake the Salmon

Bake the salmon in the preheated oven for about 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

Preparation of French Green Beans

Blanch the Green Beans

Bring a pot of salted water to a boil. Add the French green beans and blanch for about 3-4 minutes until bright green. Drain and immediately plunge them into ice water.

Sauté with Garlic

In a skillet, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Cook the Green Beans

Add the blanched green beans to the skillet. Season with salt and black pepper. Sauté for another 3-4 minutes until heated through.

Prepare Tomatoes

In a bowl, toss the cherry tomatoes with olive oil, salt, and black pepper until evenly coated.

Roast the Tomatoes

Spread the tomatoes on a baking sheet. Roast in the oven (which can be done simultaneously with the salmon) for about 15 minutes or until they are softened and slightly caramelized.

Finish with Basil

Once roasted, remove from the oven and sprinkle with fresh chopped basil before serving.
