Method
Prepare Oysters
Carefully shuck the fresh oysters, keeping the oyster meat in the bottom shell. Discard the top shell and place the oysters on a serving platter filled with crushed ice.
Make Mimosa Mignonette
Combine Ingredients
In a small bowl, whisk together the champagne vinegar, fresh orange juice, finely minced shallots, and freshly ground black pepper until well combined.
Chill
Cover the mignonette and refrigerate for at least 30 minutes to allow the flavors to meld.
Prepare House Cocktail Sauce
Mix Ingredients

Chill
