Wine Making Process
1. Harvesting the Grapes
Carefully harvest the Grenache, Cinsault, and Syrah grapes, ensuring they are ripe and free from rot.
2. Crushing the Grapes
Gently crush the harvested grapes to release their juice. This can be done using a grape crusher or by hand.
3. Pressing the Juice
Transfer the crushed grapes to a press and extract the juice. Aim to keep the juice clear by avoiding excessive pressure.
4. Fermentation
Transfer the juice to a fermentation vessel. Add yeast and sulfites to the juice to begin fermentation. Let it ferment at a controlled temperature of 15-18°C for about 2-3 weeks.
5. Racking
Once fermentation is complete, rack the wine by transferring it to a clean vessel, leaving sediment behind.
6. Aging
Allow the wine to age in stainless steel tanks for 4-6 months. This will help develop the flavors and aromas.
7. Bottling
Once aging is complete, bottle the wine in clean, sterilized bottles. Seal with corks and store in a cool, dark place.
8. Enjoy
After at least a few weeks of bottle aging, the wine is ready to be enjoyed. Serve chilled.
