Prepare the Filet Mignon

Remove the filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes. Pat the steaks dry with a paper towel.

Season the Steaks

Rub both sides of the filet mignon with olive oil, then season generously with kosher salt and black pepper.

Preheat the Grill

Preheat the grill to high heat, around 450°F (232°C).

Grill the Steaks

Place the seasoned filet mignon on the grill. Grill for about 4-5 minutes on one side, then flip and grill for an additional 4-5 minutes for medium-rare (internal temperature should reach 130°F / 54°C). Adjust time for desired doneness.

Making the Red Wine Jus

Sauté the Shallot

In a saucepan over medium heat, melt the butter. Add the diced shallot and cook until soft and translucent, about 3-4 minutes.

Add Wine and Broth

Pour in the red wine and beef broth. Bring to a simmer and cook for about 15 minutes, or until the liquid has reduced by half.

Finish the Sauce

Add fresh thyme, salt, and black pepper to taste. Strain the sauce to remove the shallots and thyme, if desired.

Serving

Rest and Serve

Remove the steaks from the grill and let them rest for 5 minutes. Serve the filet mignon with a drizzle of red wine jus over the top.
