Preheat the oven

Slice the eggplants in half lengthwise and scoop out the flesh, leaving about 1/2 inch of the outer skin. Chop the removed flesh and set aside.

Prepare the Eggplants

In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until translucent, about 3-4 minutes. Add the chopped eggplant flesh and cook for another 5 minutes.

Cook the Filling

Stir in the cooked chickpeas, diced tomatoes, saffron, cooked rice, cumin, salt, pepper, and parsley. Cook for an additional 5-7 minutes, stirring occasionally.

Add Remaining Filling Ingredients

Spoon the filling into each eggplant half and place them in a baking dish.

Stuff the Eggplants

Cover with foil and bake in the preheated oven for 25-30 minutes until the eggplants are tender.

Bake

In a bowl, toss the sliced sunchokes with olive oil, salt, and black pepper until well coated.

Prepare Sunchokes

Spread the sunchokes on a baking sheet in a single layer. Roast in the oven (you can do this while the eggplants are baking) for about 20-25 minutes or until golden and crispy, turning halfway through.

Roast Sunchokes

In a food processor, combine the cooked chickpeas, tahini, minced garlic, lemon juice, olive oil, salt, and water. Blend until smooth, adjusting consistency with more water if needed.

Blend Ingredients

Transfer the hummus to a bowl, drizzle with olive oil, and sprinkle with paprika or parsley if desired.
