Preparation of Marinade
Mix the Marinade
In a small bowl, combine olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Whisk together until well blended.
Marinate the Chicken
Place the chicken breasts in a resealable plastic bag or a bowl. Pour the marinade over the chicken, ensuring it's evenly coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours for better flavor).
Grilling the Chicken
Preheat the Grill
Preheat your grill to medium-high heat (about 375°F or 190°C).
Grill the Chicken
Remove the chicken from the marinade and let any excess drip off. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Rest the Chicken
Remove the chicken from the grill and let it rest for about 5 minutes before slicing.
Assembling the Sandwich
Prepare the Vegetables
While the chicken is resting, wash the lettuce and slice the tomato into rounds.
Build the Sandwich
Spread mayonnaise on one side of each slice of bread. Layer the sliced grilled chicken, lettuce, and tomato on two slices of the bread. Top with the remaining slices of bread, mayo side down.
Serving
Serve the Sandwich
Cut the sandwich in half if desired, and serve immediately with your favorite side.
