Preparation

Preheat your oven to 180°C (350°F).

In a small bowl, mix the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, black pepper, and lemon juice to create a marinade.

Rub the marinade all over the leg of lamb, ensuring it is well coated. Let it marinate for at least 30 minutes at room temperature.

Place the lamb in a roasting pan and pour the vegetable broth into the bottom of the pan.

Roast the lamb in the preheated oven for about 1 hour and 30 minutes or until the internal temperature reaches 60°C (140°F) for medium-rare, or to your desired doneness.

Baste the lamb with the juices from the pan every 30 minutes during cooking.

Once done, remove the lamb from the oven, cover it with foil, and let it rest for 15 minutes before carving.

Slice the lamb and serve with your favorite sides.
