Peel the Plantains

Use a sharp knife to cut off the ends of each plantain. Make a shallow lengthwise cut along the skin to make it easier to peel. Carefully remove the skin.

Slice the Plantains

Cut the peeled plantains diagonally into thick slices, about 1 inch thick.

Heat the Oil

In a large skillet, heat the vegetable oil over medium heat until it shimmers.

Fry the Plantains

Once the oil is hot, carefully add the sliced plantains to the skillet in a single layer. Avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown.

Drain and Season

Using a slotted spoon, remove the fried plantains from the skillet and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt.

Plate the Maduros

Transfer the fried plantains onto a serving platter. If desired, sprinkle with feta cheese and chopped cilantro, and serve with lime wedges on the side.
