Prepare the Tortillas
Stack the corn tortillas and cut them into quarters to form triangle-shaped chips.
Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Chips
Carefully add the tortilla triangles in batches to the hot oil. Fry them for about 2-3 minutes or until golden brown and crispy, turning occasionally.
Drain and Season
Using a slotted spoon, transfer the fried chips to a plate lined with paper towels to drain excess oil. Sprinkle with salt while still hot.
Salsa
Mix the Salsa
In a mixing bowl, combine the chopped tomatoes, onion, cilantro, and jalapeño. Squeeze the lime juice over the mixture.
Season the Salsa
Add 1 teaspoon of salt to the salsa mixture and stir well to combine all ingredients.
Chill and Serve
Let the salsa sit for at least 15 minutes to allow the flavors to meld. Serve alongside the freshly made tortilla chips.
