Method
Preparation
Toast bread and almonds
Preheat oven to 350°F (175°C). Arrange baguette slices in a single layer on a baking sheet, brush lightly with 1 tablespoon extra virgin olive oil, and toast 6–8 minutes until golden and crisp. On another sheet or same sheet if space allows, spread marcona almonds and toast 5–7 minutes until fragrant. Remove both from oven and let cool.
If using whole pecorino wedge, cut into a mixture of thin shards and 1/4-inch slices to provide textural contrast. If using pre-cut, arrange as described below.
Halve any fresh figs and drain sliced roasted peppers. Measure out truffle honey and remaining 1 tablespoon extra virgin olive oil.
Assembly
Select a large wooden board or platter. Start by placing the pecorino cheese slightly off-center. Arrange fennel salami in loose folds or rosettes on one side of the cheese and the spicy sopressata in a contrasting cluster on the other side. Aim for visual balance and easy picking.
Place toasted baguette slices in a fan or small stacks around the meats and cheese, leaving gaps for condiments.
Add small piles of toasted marcona almonds and a small cluster of cornichons near the meats to provide acid and crunch.
If using fig jam or fresh figs, spoon small dollops of jam into a ramekin or nestle fig halves on the board near the cheese for sweetness.
Arrange roasted red pepper slices, if using, in a small pile or folded area on the board.
Finish with truffle honey and oil
Drizzle the truffle honey in a few thin lines over the pecorino and one or two pieces of salami (about 2 tablespoons over the cheese and 1 tablespoon lightly on meat). Lightly drizzle the remaining 1 tablespoon extra virgin olive oil over the bread slices or a small area of the board. Sprinkle freshly ground black pepper over the pecorino and add fresh thyme sprigs for aroma and garnish.
Serving
Provide small cheese knives and toothpicks. Encourage guests to pair a slice of pecorino with a folded slice of fennel salami or sopressata, a toast, a dab of truffle honey, and a cornichon or almond for balanced bites.
If preparing ahead, toast bread and almonds up to 24 hours in advance and store in airtight container. Slice meats and cheese no more than 2–4 hours ahead and keep refrigerated; assemble 15–30 minutes before serving to bring flavors closer to room temperature.
